Once you've tried our delicious pepper and tomato summer soup at Armitage's you'll definitely want to make it yourself!
It's quick and easy, here is how:
Ingredients:
4 red peppers
1 onion
1 garlic clove
1 red chilli
3tsp tomato puree
1 and half pints chicken stock
1 lime
Cook the peppers and onion in oil for 4-5 minutes, stir in the garlic and chilli with the tomato puree. Add half the stock and simmer for 10 minutes. Blend and then add the rest of the stock, add grated lime rind and juice just before serving. Add a touch of cream for an extra special touch!
